INGREDIENTS:
- 2 cups packed herbs, chopped or ripped*
- 1 clove of garlic, crushed (optional)
- 3 tbsp olive oil
- 2 tsp sunflower seeds
- 1-2 tbsp parmesan cheese (optional)
- 2 tbsp lemon juice
- Salt and pepper, to taste
*Choose your favorites: Basil, cilantro, parsley, thyme, mint, spinach, kale.
INSTRUCTIONS:
- Rip or chop herbs and add 2 packed cups to a blender or food processor. If you choose to add garlic, blend it with the herbs.
- Add olive oil, sunflower seeds, lemon juice, parmesan (optional), and salt and pepper to taste.
- Blend until the pesto has a smooth and even texture. You may need to use a spoon to stir and pack the pesto down as you blend.
- Serve with crackers, bread, or pasta. Enjoy!
