INGREDIENTS: 

  • 2 cups packed herbs, chopped or ripped*
  • 1 clove of garlic, crushed (optional)
  • 3 tbsp olive oil
  • 2 tsp sunflower seeds
  • 1-2 tbsp parmesan cheese (optional)
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

*Choose your favorites: Basil, cilantro, parsley, thyme, mint, spinach, kale.

INSTRUCTIONS: 

  1. Rip or chop herbs and add 2 packed cups to a blender or food processor. If you choose to add garlic, blend it with the herbs.
  2. Add olive oil, sunflower seeds, lemon juice, parmesan (optional), and salt and pepper to taste.
  3. Blend until the pesto has a smooth and even texture. You may need to use a spoon to stir and pack the pesto down as you blend.
  4. Serve with crackers, bread, or pasta. Enjoy!
