INGREDIENTS:

  • ½ to ¼ oz. dried wakame or dried mixed seaweed
  • 1 small cucumber (or ½ a large cucumber)
  • 1 Tablespoon (Tbsp) soy sauce such as tamari
  • 1 Tbsp rice vinegar
  • 1 Teaspoon (tsp) real maple syrup
  • 1 tsp sesame oil
  • 1 small piece of ginger, grated (enough to make 1 tsp of juice)
  • sesame seeds, lightly toasted
  • Green onion – one stem

INSTRUCTIONS: 

  1. Soak the wakame or mixed seaweed in water for at least ten minutes
  2. Cut the cucumber into bite-sized pieces. If seeds are large in the cucumber, scoop them out.
  3. Cut the green onion into bite-sized pieces
  4. Chop the soaked seaweed
  5. Mix the soy sauce, rice vinegar, maple syrup, ginger juice and sesame oil.
  6. Drizzle the dressing onto the seaweed, cucumber and green onion.
  7. Sprinkle on the sesame seeds. Serve and enjoy!
