INGREDIENTS: 

  • Cucumbers
  • Carrots, prepackaged or cut into small strips
  • Lettuce, cut lengthwise in half
  • Cilantro, with stems
  • Rice Vermicelli
  • Rice Paper Wrappers
  • Water
  • (Optional) Pork, chicken, shrimp, or another protein option

INSTRUCTIONS: 

  1. Prepare your vegetables, Peel the cucumbers, cut in half, and slice in long strips. Slice carrots in thin strips or buy prepackaged carrot slices. Cut lettuce in half, lengthwise.
  2. Cook rice vermicelli in a pot of boiling water, for a few minutes until soft. Stir the entire time, so vermicelli doesn’t stick to the bottom.
  3. Place a rice wrapper in a small bowl of water so it becomes completely wet.
  4. In the center of the wrapper, place a piece of lettuce, some cucumber slices, a few carrot slices, and a few pieces of cilantro with stems, Fold each side into the center; fold up the bottom and roll. (Optional) If you choose to add meat, add it to the wrapper before rolling.
  5. Enjoy!
